Mapache Coffee Estate is a fifth-generation company of coffee producers, owned and managed by Jan-Carlo and Sofia Handtke in the Apaneca Ilamatepec mountain range of El Salvador. Over 125 locals are employed year round at Mapache Coffee, and during the harvest season their staff grows to over 600 people who work together to build coffee nurseries, replant at Mapache’s six farm properties and process the ripe cherries.
Mapache maintains a strong commitment to the health of the coffee farms, ensuring that each farm has a canopy protecting the coffee plants and soil. This coffee is a blend of ethically grown and processed coffees from their six farms and each cherry is carefully selected and handpicked.
The limited amounts of water used during the washing process at their wet mill gets recycled and reused in other more than one harvest wash. Processed with little amounts of water at Mapache's eco-friendly milling station, the coffee is slowly sun dried in clay patios to ensure consistent quality and long shelf life. All the remaining pulp accumulated from the wet mill washing process is incorporated back into the farms as compost to return key nutrients to the soil.
